Wholegrain Almond Fresh Fig Cookies
Equipment

- Electric Mixer

Ingredients
Fresh Fig Filling Ingredients
- 18 Fresh Figs (cut into small pieces)
- 2 tbsp Blanched Almond Butter
- 1/2 cup Fresh Lemon Juice
- 2 tsp Lemon Rind
- 1/4 cup Honey (adjust to taste and health requirements – add honey in accordance with the natural sweetness of the figs)
- 2 tsp Cinnamon
- 2 tbsp Oat Flour
Cookie Dough Ingredients
- 1 Egg
- 1/3 cup Blanched Almond Butter
- 1/2 cup Honey
- 1/4 cup Applesauce (without added sugar or preservatives)
- 1 cup Blanched Almond Flour
- 2 cups Wholegrain Spelt Flour (sifted)
- 1 cup Oat Flour
- 1 tsp Baking Soda
- 1/3 cup Water
Cookie Coating
- 1 tbsp Honey
- 1 tbsp Water
- Almond Flakes
Instructions
Creating The Fresh Fig Filling
- It’s best to make the filling in advance.
- Gather the ingredients.

- Clean the fresh figs and slice them into small pieces.
- Place the cut figs into a medium size pot with 1 tablespoon of blanched almond butter.
- Gradually bring to a boil.
- Add the lemon juice, lemon rind, honey and cinnamon. Mix well.
- Lower the heat & simmer for 45 minutes or until most of the liquid evaporates, mixing from time to time.
- Add 2 tbsp of oat flour, mix well and simmer for 5 more minutes. Let Cool.
- Refrigerate until you’re ready to fill the dough.

Creating The Dough
- Gather the ingredients

- Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius).
- Whisk the eggs and almond butter in an electric mixer until well blended.
- Add the honey and applesauce and continue to whisk for another minute.
- Gradually add the other ingredients and whisk until well blended.
- If the dough is not pliable, gradually add a small amount of water or sifted flour until you have a dough that you can roll out.
- Form a circle from the dough and divide it into four balls.

Create Roll & Cookies
- Place 1 ball between 2 baking sheets.
- Flatten the dough with a rolling pin trying to create an oblong shape.
- The dough should be thin, about 1/8-inch thick – 1/3 centimeter thick.
- Carefully peel away the top baking sheet.

- Cut the round edges of the oblong shape to create a rectangle.

- Place part of the pre-prepared fig filling down the center of the rectangle.

- Fold one side of the rectangle over the other to form a long roll.

- Turn the roll to the other side so that the smooth side is turned upward.
- Cut the roll diagonally, 1 ½ inches – 4 centimeter slices, with a scalloped knife

Coating The Cookie
- Mix 1 tablespoon of honey with 1 tablespoon of water.
- Brush the mixture on the cookie tops.

- Sprinkle almond flakes on each cookie. Place the cookies in a baking pan lined with a baking sheet.

- Bake for 12 minutes.
