Sweet Potato Patties Recipe
These Sweet Potato Patties are gluten free, wholesome and delicious. The recipe calls for grated sweet potato, onions, almond flour and eggs. Add a sprinkle of healthy olive oil, a dash of salt and a pinch of ground black pepper. The result is a savory healthy dish with a hint of complementary natural sweetness. Sweet Potato Patties
Follow this easy gluten-free Sweet Potato Patties Recipe to blend sweet potatoes, onions, almond flour, eggs and olive oil. Shape patties and bake to create a treat that is appetizing as well as healthy. Enjoy!
Equipment
- Food Processor (or grater)
- Electric Mixer
- 2 Large Baking Pans
- 2 Baking sheets
Ingredients
- 5 cups Sweet Potatoes (grated)
- 2 cups Onions (diced)
- 1/2 cup Blanched Almond Flour
- 2 Eggs
- 2 tbsp Olive Oil
- 1/2 tsp Salt (adjust to taste or health requirements)
- 1/4 tsp Ground Black Pepper
Instructions
- Preheat the oven at 350 degrees Fahrenheit (175 Celsius).
- Sauté the onions in olive oil until golden brown. (Cover the pot in the beginning. This brings out the natural juices with less use of oil.) Set aside to cool.
- Coarsely grate the sweet potatoes. (This can be done in a food processor.)
- Beat the eggs and olive oil in an electric mixer. Blend in the almond flour, ground black pepper and salt.
- Add the grated sweet potatoes and blend well.
- Using a tablespoon, spoon the mixture onto a baking tray lined with a baking sheet.
- Bake for 15 minutes or until golden.
