  • Electric Mixer
  • 2 Large Baking Pans
  • 2 Baking sheets

Ingredients
  

  • 5 cups Sweet Potatoes (grated)
  • 2 cups Onions (diced)
  • 1/2 cup Blanched Almond Flour
  • 2 Eggs
  • 2 tbsp Olive Oil
  • 1/2 tsp Salt (adjust to taste or health requirements)
  • 1/4 tsp Ground Black Pepper

Instructions
 

  • Preheat the oven at 350 degrees Fahrenheit (175 Celsius).

  • Sauté the onions in olive oil until golden brown. (Cover the pot in the beginning. This brings out the natural juices with less use of oil.) Set aside to cool.

  • Coarsely grate the sweet potatoes. (This can be done in a food processor.)
  • Beat the eggs and olive oil in an electric mixer. Blend in the almond flour, ground black pepper and salt.
  • Add the grated sweet potatoes and blend well.
  • Using a tablespoon, spoon the mixture onto a baking tray lined with a baking sheet.

  • Bake for 15 minutes or until golden.
