Sweet Potato Patties

- 5 cups Sweet Potatoes (grated)
- 2 cups Onions (diced)
- 1/2 cup Blanched Almond Flour
- 2 Eggs
- 2 tbsp Olive Oil
- 1/2 tsp Salt (adjust to taste or health requirements)
- 1/4 tsp Ground Black Pepper
Preheat the oven at 350 degrees Fahrenheit (175 Celsius).
Sauté the onions in olive oil until golden brown. (Cover the pot in the beginning. This brings out the natural juices with less use of oil.) Set aside to cool.
Coarsely grate the sweet potatoes. (This can be done in a food processor.)
Beat the eggs and olive oil in an electric mixer. Blend in the almond flour, ground black pepper and salt.
Add the grated sweet potatoes and blend well.
Using a tablespoon, spoon the mixture onto a baking tray lined with a baking sheet.
Bake for 15 minutes or until golden.
