Roasted Honey Chicken
Follow this easy Roasted Honey Chicken Recipe to create a sweet-savoy chicken dish. Mix lean chicken with savory choice spices, red onions and celery. Add sweet potatoes, prunes and a hint of honey for sweetness. This festive treat is delicious, healthy & gluten free.
Equipment
- Nonstick Baking Pan (medium size)
- Large Dish
- Baking Sheet
Ingredients
- 2 tbsp Sesame Seeds (lightly toasted, for garnishing the chicken)
- 6 Small Sweet Potatoes
- 2 Red Onions (sliced into circles)
- 2 Celery Stalks (large, cut into large pieces)
- 12 Pitted Prunes (organic without preservatives or added sugar)
- 1/4 cup Honey
- 4 Chicken Thighs (remove skin and fat)
- 1 tbsp Sweet Paprika
- 1 tbsp Granulated Garlic (spice)
- 1/4 tsp Ground Black Pepper
Instructions
- Preheat the oven to 350-degree Fahrenheit (175-degrees Celsius).
Prepare The Sesame
- Heat the sesame seeds in a nonstick frying pan on a low flame.
- Gently stir until they are a light golden color. It should take 1- 2 minutes. Set aside for garnishing the chicken before serving.
Prepare The Vegetables, Prunes & Honey
- Peel the sweet potatoes. Peel the red onions and slice into circles. Cut the Celery into large pieces.
- Make sure the prunes are pitted.
- Measure the honey.
Prepare The Chicken
- Remove the skin from the chicken thighs and trim the fat.
- Wash the chicken and drain well.
- In a large dish mix the chicken with the spices until well distributed.
- Add the honey and blend well.
- Place the chicken onto a nonstick baking pan.
- Arrange the sweet potatoes, onions, prunes and celery stalks on and around the chicken.
- Cover the pan with a baking sheet.
- Bake for 45 minutes.
- Remove the baking sheet & bake uncovered for another 35 minutes or until golden brown.
- Baste the chicken and vegetables from time to time while it is baking.
- Sprinkle the toasted sesame seeds on the chicken before serving.
