Mediterranean Lemony Beet Salad
Follow this vegan and gluten free Mediterranean Lemony Beet Salad Recipe to create a flavorful and appealing appetizer or side dish. Combine naturally sweet beets with red onions and a lemony dressing for a delicious appetizer or side dish.
Equipment
- Medium Size Pot (for cooking the beets)
- Small Bowl (for the sliced onions)
- Crinkle Cutter (preferable, however you may opt to use a knife)
- Cutting Board
- Large Bowl (for mixing the salad)
Ingredients
- 4 Beets (medium size – 3 ½ cups of beets measured after sliced into pieces – you can cook the beets or buy precooked vacuum-packed beets without sugar or additives)
- 2 Red Onions (approximate number – 2 cups measured after sliced into circles)
- 1 teaspoon Salt (adjust to taste or health requirements)
- ½ cup Fresh Lemon Juice
- 2 teaspoons Fresh Lemon Rind (1 teaspoon for mixing into the salad and one teaspoon to garnish)
- ¼ teaspoon Ground Black Pepper
- 1 teaspoon Cumin
- 4 tablespoons Olive Oil
Instructions
Gather The Ingredients
- Gather the ingredients of the salad.

Prepare The Beets – Cooking Option
- Wash the beets well and remove the stems.
- In a medium size pot, place the washed beets and cover them with water.
- Bring to a boil, lower the flame and cook for about 35 minutes or until the beets are tender when pricked with a fork. The time will depend on their size and quality.
- Place the cooked beets into cold water and let cool.
- When cool enough to handle, peel the outer peel of the beets. Rinse and dry.
Prepare The Onions
- Peel the onions.
- Thinly slice the onions trying to keep a circle shape.

- Place the sliced onions into a small bowl and mix in the salt. Set aside.

Create The Salad
- Using a crinkle cutter, slice the peeled beets lengthwise into quarters and then thinly slice.

- Place them into a large bowl.
- Add the pre-prepared onion circles, spices and flavorings – use 1 teaspoon of lemon rind.
- Gently toss the ingredients together until well mixed.

- Refrigerate.
- Before serving, garnish with 1 teaspoon of lemon rind.
Notes
The time it takes to make the salad depends on the beets you choose.
As noted above, you can use high quality vacuum-packed pre-cooked beets without additives or added sugar or opt to cook fresh beets.
