Cottage Cheese Raisin Kugel
Equipment
- Electric Mixer
- 1 Large Pot (for cooking the noodles)
- 1 Round Nonstick Baking Pan (10 inches-26 centimeters)
Ingredients
- 14 ounces Wholegrain Broad Noodles (400 grams)
- 1/4 tsp Salt (for cooking the noodles)
- 3 Eggs
- 2/3 cup Yogurt
- 1 cup Cottage Cheese
- 1 tsp Lemon Rind (grated)
- 1 tsp Cinnamon (spice)
- 3 tbsp Pure Maple Syrup
- 1/2 cup Raisins (seedless, organic, no added sugar or preservatives)
Instructions
- Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius).

- Cook the noodles according to the package instructions in boiling water and salt. Drain well. Set aside.

- Whisk the eggs until fluffy. Add the cottage cheese and yogurt and continue to blend.
- Blend in the lemon rind, cinnamon and maple syrup.
- Gradually blend in the noodles and raisins.
- Pour the batter into a round non-stick baking pan cake form (10 inches-26 centimeters).

- Bake for 50 minutes or until golden.
- Refrigerate.
