  • Sieve (for draining the bulgur)
  • Large Bowl (for mixing the salad)

Ingredients
  

Bulgur Ingredients

  • 1/2 cup Bulgur (soak for 1/2 hour or according to package instructions)
  • 2 cups Boiling Hot Water (for soaking the bulgur)

Salad Additions Ingredients

  • 1/2 cup Fresh Pomegranate Seeds
  • 1 cup Fresh Mint Leaves (measured before chopping)
  • 1 cup Fresh Parsley Leaves (measured before chopping)
  • 1/2 cup Fresh Scallions (measured after thinly chopped)

Dressing Ingredients

  • 2 tbsp Olive Oil
  • 1/3 cup Fresh Lemon Juice
  • 1 tsp Fresh Lemon Rind
  • 1/8 tsp Ground Black Pepper
  • 1/2 tsp Salt (adjust to taste and health requirements)

Prepare The Bulgur

  • Place the bulgur in a heat resistant bowl.
  • Cover with 2 cups of hot boiling water.
  • Set aside for 1/2 hour (see notes).
  • Drain the liquid through a sieve. Set aside. (no cooking required!)

Prepare The Salad Additions

  • Thoroughly wash the mint and parsley and remove the leaves from their stems.
  • Chop the mint and parsley leaves.
  • Thoroughly wash the scallions and thinly chop.
  • Set aside the salad additions.

Prepare The Dressing

  • Gather the dressing ingredients.

  • In a small bowl mix all the dressing ingredients until well blended.
