Small Heat Resistant Bowl (for soaking the bulgur)
Sieve (for draining the bulgur)
Large Bowl (for mixing the salad)
Bulgur Ingredients
- 1/2 cup Bulgur (soak for 1/2 hour or according to package instructions)
- 2 cups Boiling Hot Water (for soaking the bulgur)
Salad Additions Ingredients
- 1/2 cup Fresh Pomegranate Seeds
- 1 cup Fresh Mint Leaves (measured before chopping)
- 1 cup Fresh Parsley Leaves (measured before chopping)
- 1/2 cup Fresh Scallions (measured after thinly chopped)
Dressing Ingredients
- 2 tbsp Olive Oil
- 1/3 cup Fresh Lemon Juice
- 1 tsp Fresh Lemon Rind
- 1/8 tsp Ground Black Pepper
- 1/2 tsp Salt (adjust to taste and health requirements)

Prepare The Bulgur
Place the bulgur in a heat resistant bowl.
Cover with 2 cups of hot boiling water.
Set aside for 1/2 hour (see notes).
Drain the liquid through a sieve. Set aside. (no cooking required!)
Prepare The Salad Additions
Thoroughly wash the mint and parsley and remove the leaves from their stems.
Chop the mint and parsley leaves.
Thoroughly wash the scallions and thinly chop.
Set aside the salad additions.
Prepare The Salad
Place the drained bulgur into a large bowl.
Add the pomegranate seeds and the chopped scallions, mint & parsley.
Pour the dressing over the salad.
Gently mix until well distributed.
