Yogurt Raisin Muffins Recipe

Yogurt Raisin Muffins
Follow this easy Yogurt Raisin Muffins Recipe to create a nutritious treat. Blend yogurt, oats, raisins and cinnamon for a muffin that is fluffy and delicious!
Equipment
- Electric Mixer
- Cupcake Forms (2.5 inches – 6.3 centimeters circumference, see note)
- Cupcake Paper Liners
- 1 Large Baking Sheet
- 1 Large Baking Pan
Ingredients
- 1 tbsp Almond Butter
- 1 Egg
- 2 tbsp Pure Maple Syrup
- 2/3 cup Yogurt (3%)
- 3/4 cup Oat Flour
- 3/4 cup Oats
- 1 tsp Baking Soda
- 1 tsp Cinnamon
- 1/2 cup Raisins
Instructions
- Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius).
- Beat the almond butter and eggs.
- Add the yogurt and maple syrup and beat for another minute.
- Gradually add the dry ingredients and beat until well blended.
- Blend in the raisins.
- Spoon the batter into the cupcake forms (lined with cupcake paper) ¾ full.
- Bake for 20 minutes or until golden.
Notes
Note about cupcake forms: This recipe was tested with 2.5 inches – 6.3 centimeters circumference cupcake forms. You can use a different size, however serving quantity and/or baking time may change.
