Cocoa Almond Oat Cookies
Equipment
- Food Processor
- Electric Mixer
- Large Baking Sheet
- Large Baking Pan
Ingredients
- 3 tbsp Cocoa
- 4 tbsp Hot Boiled Water
- 3/4 cup Almonds
- 1/2 tsp Pure Vanilla Extract
- 3/4 cup Honey
- 2 Eggs
- 4 1/2 cups Oat Flour
- 3/4 tsp Baking Soda
- 1/2 tsp Salt
Instructions
- Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius).
- Gather the ingredients.

- Mix the cocoa with 4 tablespoons of hot boiled water until well blended. Set aside to cool.
- Blend the almonds in a food processor until the almonds begin to turn pasty. This will take several minutes.
- Add the vanilla and 4 tbsp of the honey and continue to blend.

- In an electric mixer, whisk the eggs and the almond mixture.
- Add the rest of the honey and continue to whisk until well blended.
- On the lowest speed add the cocoa mixture and whisk until well blended.
- Add the oat flour, baking soda and salt. Mix well.

- Wet your hands and form small balls from the dough, approximately 1 ½ inches – 4 centimeters in diameter.
- Place each ball on the baking sheet in a baking pan and gently press it down.

- Bake for 12 minutes.
