- 3 tbsp Cocoa
- 4 tbsp Hot Boiled Water
- 3/4 cup Almonds
- 1/2 tsp Pure Vanilla Extract
- 3/4 cup Honey
- 2 Eggs
- 4 1/2 cups Oat Flour
- 3/4 tsp Baking Soda
- 1/2 tsp Salt
Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius).
Gather the ingredients.
Mix the cocoa with 4 tablespoons of hot boiled water until well blended. Set aside to cool.
Blend the almonds in a food processor until the almonds begin to turn pasty. This will take several minutes.
Add the vanilla and 4 tbsp of the honey and continue to blend.
In an electric mixer, whisk the eggs and the almond mixture.
Add the rest of the honey and continue to whisk until well blended.
On the lowest speed add the cocoa mixture and whisk until well blended.
Add the oat flour, baking soda and salt. Mix well.
Wet your hands and form small balls from the dough, approximately 1 ½ inches - 4 centimeters in diameter.
Place each ball on the baking sheet in a baking pan and gently press it down.
Bake for 12 minutes.
