  • 1 Deep Bowl
  • 1 Large Baking Tray
  • 1 Baking Sheet
  • 1 Grater (or food processor)

Ingredients
  

  • 4 cups Zucchini (peeled and grated)
  • 1/2 cup Scallions (diced)
  • 1 Egg
  • 3 tbsp Wholegrain Spelt Breadcrumbs
  • 2 tbsp Olive Oil (1 tbsp on baking sheet, 1 tbsp to drizzle on top of patties)
  • 1/4 tsp Ground Black Pepper
  • 1/2 tsp Salt (adjust to taste or health requirements)

Instructions
 

  • Preheat the oven at 350 degrees Fahrenheit (175 Celsius).

  • Grate the zucchini (manually or in a food processor).
  • Beat the eggs (can be done manually).
  • Add the eggs and other ingredients to the grated zucchini and mix well.
    Zucchini Patties Recipe - Mixture
  • Form round flat patties. (If the mixture is loose, add a bit more breadcrumbs.)
  • Place the patties on a baking tray lined with slightly greased baking paper (use 1 tablespoon olive oil). Drizzle 1 tablespoon of olive oil on top of the patties.
  • Bake for 20 minutes or until golden brown.
