- 14 ounces Wholegrain Broad Noodles (400 grams)
- 1/4 tsp Salt (for cooking the noodles)
- 3 Eggs
- 2/3 cup Yogurt
- 1 cup Cottage Cheese
- 1 tsp Lemon Rind (grated)
- 1 tsp Cinnamon (spice)
- 3 tbsp Pure Maple Syrup
- 1/2 cup Raisins (seedless, organic, no added sugar or preservatives)
Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius).
Cook the noodles according to the package instructions in boiling water and salt. Drain well. Set aside.
Whisk the eggs until fluffy. Add the cottage cheese and yogurt and continue to blend.
Blend in the lemon rind, cinnamon and maple syrup.
Gradually blend in the noodles and raisins.
Pour the batter into a round non-stick baking pan cake form (10 inches-26 centimeters).
Bake for 50 minutes or until golden.
Refrigerate.
