Grapes
- 2 cups Grapes (preferably purple, sweet & seedless)
- 2 tbsp Oat Flour (to coat the grapes)
Batter
- 2 Eggs
- 1/2 cup Blanched Almond Butter
- 1/2 cup Applesauce (without sugar or preservatives)
- 4 tbsp Honey
- 1 tsp Pure Vanilla Extract
- 2 tbsp Fresh Lemon Juice
- 1 tsp Lemon Rind
- 1 cup Oat Flour
- 1 1/2 cups Blanched Almond Flour
- 1 1/2 tsp Baking Soda
- 1/4 tsp Salt
Decoration
- 8 tbsp Almond Flakes (for decorating cake)
Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius).
Wash the grapes thoroughly and drain well.
Coat the grapes with 2 tablespoons of oat flour. Set aside.
Beat the eggs and almond butter in an electric mixer until very well blended.
Add the applesauce, honey and vanilla. Continue to beat for another minute or two.
Add the lemon juice and rind and blend well.
Gradually add the dry ingredients and beat until well blended.
Fold in the coated grapes with a spatula until distributed well.
Pour the batter into a bunt cake springform baking pan or a round springform baking pan (10 inches - 26 centimeters in circumference).
Sprinkle the top of the cake with almond flakes.
Bake the decorated cake for 40 minutes.
Let cool and remove from the baking pan.
