Ingredients
- 2 cups Onions (peeled & diced)
- 2 tbsp Olive Oil
- 3 cups Carrots (peeled & cut into small cubes)
- 3 cups Zucchini (peeled & cut into small cubes)
- 1 cup Red Bell Peppers (cut into small cubes)
- 4 cups Button Mushrooms (sliced)
- 2 stalks Celery (cut into large pieces)
- 1 tbsp Turmeric (spice)
- 1/4 tsp Black Pepper
- 1 tsp Salt (adjust to taste or health requirements)
- 6 tbsp Oats
- 4 cups Water
Instructions
Preparing The Vegetables
- Peel the onions and dice. Peel the carrots and cut into small cubes. Peel the zucchinis and cut into small cubes. Cut the red bell peppers into small cubes. Slice the button mushrooms. Cut the celery into small pieces.
Preparing the Soup
- Sauté the onions in olive oil (Cover the pot in the beginning. This brings out the natural juices with less use of oil.) After several minutes uncover and sauté until golden brown.
- Add the carrots and zucchini and continue to sauté for several minutes stirring from time to time.
- Next, add the red bell peppers, mushrooms and spices. Sauté, for another several minutes.
- Add the water and stir again. Bring to a boil, then simmer for 40 minutes.
