Spinach Frittata
Follow this easy Spinach Frittata Recipe to create a baked omelet made from fresh spinach leaves, scallions and wholegrain spelt breadcrumbs. The result is a wholesome delicious Mediterranean treat.
Equipment
- 1 Pot (medium size with cover)
- 1 Electric Mixer (or whisk)
- 1 Round Nonstick Baking Pan (with removable bottom – 11 inches – 28 centimeters)
Ingredients
- 14 ounces Spinach Leaves (400 grams)
- 1 cup Scallions (diced)
- 2 Eggs
- 4 tbsp Olive Oil
- 1/2 cup Wholegrain Spelt Breadcrumbs
- 1/2 tsp Salt (adjust to taste or health requirements)
- 1/4 tsp Ground Black Pepper
Instructions
- Preheat the oven to 350 Fahrenheit -175 Celsius.
Spinach & Scallions
- In a pot, cover the spinach leaves with boiling hot water and bring to a boil.
- Simmer for 2 minutes. Drain the leaves, cool and cut into small pieces.
- Dice the scallions. Set aside.
Egg Mixture
- Whisk the eggs with olive oil.
- Add the salt and pepper. Whisk again.
Making the Frittata
- First, gently blend the egg mixture with the breadcrumbs, then with the spinach & scallions.
- Pour the mixture into a nonstick baking pan and spread evenly.
- Bake for 20 minutes or until golden.
Notes
Serve hot.
