Spinach Frittata

Follow this easy Spinach Frittata Recipe to create a baked omelet made from fresh spinach leaves, scallions and wholegrain spelt breadcrumbs. The result is a wholesome delicious Mediterranean treat.

1 Pot (medium size with cover)
1 Electric Mixer (or whisk)
1 Round Nonstick Baking Pan (with removable bottom - 11 inches - 28 centimeters)
- 14 ounces Spinach Leaves (400 grams)
- 1 cup Scallions (diced)
- 2 Eggs
- 4 tbsp Olive Oil
- 1/2 cup Wholegrain Spelt Breadcrumbs
- 1/2 tsp Salt (adjust to taste or health requirements)
- 1/4 tsp Ground Black Pepper
Spinach & Scallions
In a pot, cover the spinach leaves with boiling hot water and bring to a boil.
Simmer for 2 minutes. Drain the leaves, cool and cut into small pieces.
Dice the scallions. Set aside.
Making the Frittata
First, gently blend the egg mixture with the breadcrumbs, then with the spinach & scallions.
Pour the mixture into a nonstick baking pan and spread evenly.
Bake for 20 minutes or until golden.
