Ingredients
  

  • 4 Eggs
  • 1 cup Tahini (sesame seed paste)
  • 2 tbsp Pure Maple Syrup
  • 2 tsp Pure Vanilla Extract
  • 2 cups Ground Sesame Seeds (grind in spice/coffee grinder)
  • 2 tsp Baking Soda
  • 3 cups Oat Flour
  • 1 cup Dates – Preferably Medjool (organic, no added sugar – cut into small pieces)
  • 1 cup Sesame Seeds (for topping the cookie-approximate amount)

Instructions
 

  • Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius).

  • Whisk the eggs, tahini, vanilla, and maple syrup in an electric mixer until well blended.
  • Gradually add the ground sesame seeds and baking soda, then whisk until mixed well.
  • Blend in the oat flour.
