Ingredients
- 8 Potatoes – Preferably Red (medium size)
- 4 tbsp Fresh Thyme Leaves (measurement is after removing the leaves from the stem)
- 8 tbsp Olive Oil
- 1 tsp Salt (adjust to taste or health requirement)
- 1/4 tsp Ground Black Pepper
- 2 tbsp Granulated Garlic (spice)
Instructions
- Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius).
Prepare The Potatoes
- Wash the unpeeled potatoes well.
- Place one potato on a cutting board and carefully slice the potato stopping ¾ down. The slices should be approximately 1/4 inch – 1/2 centimeter thick.
- Repeat with the rest of the potatoes.
Prepare The Thyme Garnish
- Remove the thyme leaves from the stems.
- Mix the olive oil, thyme leaves, granulated garlic, salt and pepper.
Garnish & Bake The Accordion Potatoes
- Spread the thyme garnish on top of the potatoes, letting it seep into the cut slices.
- Place the potatoes into a nonstick baking pan and cover with a baking sheet.
- Bake for 40 minutes. Uncover and bake for an additional 20 minutes or until tender and golden.
