Orange Lentil Soup
Follow this easy step-by-step recipe to create a soothing orange lentil soup. Sauté root vegetables, lentils and choice spices and your wholesome vegan & gluten free soup is almost ready. Enjoy!
Equipment
- 1 Large Pot (with cover)
Ingredients
- 1/2 cup Red Lentils (orange)
- 4 Onions (medium size)
- 1 Sweet Potato (medium size)
- 3 Carrots (large)
- 4 stalks Celery (you can include celery inner leaves-light green)
- Parsley (several stalks and leaves)
- 4 cloves Fresh Garlic (sliced into thin rounds)
- 4 tbsp Olive Oil
- 2 tsp Turmeric
- 2 tsp Salt (adjust to taste or health requirement)
- 1/2 tsp Ground Black Pepper
- 8 cups Water (2 liters- 2 quarts)
Instructions
- Soak the lentils for 2 hours. Drain in sieve.
- Sauté the onions in olive oil until golden brown. (Cover the pot in the beginning. This brings out the natural juices with less use of oil.)
- Add the carrots and sauté for several minutes, partially covered.
- Add the sweet potatoes and continue to sauté, partially covered for 2 more minutes.
- Add the lentils, garlic and spices. Mix and continue to sauté for 2 minutes.
- Add the water, parsley and celery.
- Bring to a boil and simmer for 1 hour.
Notes
Remove the celery and parsley before dishing.
