Ingredients
  

  • 1/2 cup Red Lentils (orange)
  • 4 Onions (medium size)
  • 1 Sweet Potato (medium size)
  • 3 Carrots (large)
  • 4 stalks Celery (you can include celery inner leaves-light green)
  • Parsley (several stalks and leaves)
  • 4 cloves Fresh Garlic (sliced into thin rounds)
  • 4 tbsp Olive Oil
  • 2 tsp Turmeric
  • 2 tsp Salt (adjust to taste or health requirement)
  • 1/2 tsp Ground Black Pepper
  • 8 cups Water (2 liters- 2 quarts)

Instructions
 

  • Soak the lentils for 2 hours. Drain in sieve.

  • Sauté the onions in olive oil until golden brown. (Cover the pot in the beginning. This brings out the natural juices with less use of oil.)
  • Add the carrots and sauté for several minutes, partially covered.
  • Add the sweet potatoes and continue to sauté, partially covered for 2 more minutes.
  • Add the lentils, garlic and spices. Mix and continue to sauté for 2 minutes.

  • Add the water, parsley and celery.
  • Bring to a boil and simmer for 1 hour.

Notes

Remove the celery and parsley before dishing.
