(orange)

(you can include celery inner leaves-light green)
Parsley
(several stalks and leaves)

Fresh Garlic
(sliced into thin rounds)

(adjust to taste or health requirement)

(2 liters- 2 quarts)
Instructions
Soak the lentils for 2 hours. Drain in sieve.
Sauté the onions in olive oil until golden brown. (Cover the pot in the beginning. This brings out the natural juices with less use of oil.)
Add the carrots and sauté for several minutes, partially covered.
Add the sweet potatoes and continue to sauté, partially covered for 2 more minutes.
Add the lentils, garlic and spices. Mix and continue to sauté for 2 minutes.
Add the water, parsley and celery.
Bring to a boil and simmer for 1 hour.
Notes
Remove the celery and parsley before dishing.
