Ingredients
Olives
- 2 cups Pitted Green Olives
- 1 Small Lemon (sliced & pitted)
- 1/2 tsp Turmeric (spice)
- 1 1/2 cups Water (or enough to cover the olives)
Tomato Sauce
- 1 tbsp Olive Oil
- 1 tbsp Fresh Garlic Cloves (crushed, about 3 cloves)
- 2 cups Tomtoes (peeled & diced, about 3 tomatoes)
- 1 tbsp Paprika
- 1/4 tsp Ground Black Pepper
- 1/2 tsp Salt (adjust to taste or health requirements)
- 2 tbsp Tomato Paste (without preservatives, salt or sugar)
- 2 tbsp Fresh Oregano Leaves (diced)
Instructions
Gather The Ingredients
- Pit the olives (or if you use pitted olives make sure no pits were left).
- Slice the lemon and remove pits.
- Measure the spices, olive oil & tomato paste.
- Rinse and dice the fresh oregano leaves.
- Rinse, peel and dice the tomatoes. Tip: To easily peel tomatoes Gently pierce the tomato skin. Cover with boiling hot water. Wait 20 minutes and peel.
Prepare The Olives
- Place the pitted olives, sliced lemon, and turmeric in a small pot.
- Cover with water (about 1 ½ cups water).
- Bring to a boil. Lower the flame and simmer for 5 minutes.
- Drain well and remove the lemon slices.
Prepare The Sauce
- Sauté the crushed garlic cloves in olive oil only until slightly golden (for about 1 minute).
- Add the diced tomatoes. Bring to a boil, lower the flame and cook for 10 minutes.
- Add the rest of the ingredients. Stir and continue to simmer for an additional 15 minutes.
Combine Olives & Sauce
- Add the olives to the sauce.
- Bring to a boil. Lower the flame and simmer for an additional 5 minutes.
Notes
Can be served hot or cold.
