Ingredients
  

Olives

  • 2 cups Pitted Green Olives
  • 1 Small Lemon (sliced & pitted)
  • 1/2 tsp Turmeric (spice)
  • 1 1/2 cups Water (or enough to cover the olives)

Tomato Sauce

  • 1 tbsp Olive Oil
  • 1 tbsp Fresh Garlic Cloves (crushed, about 3 cloves)
  • 2 cups Tomtoes (peeled & diced, about 3 tomatoes)
  • 1 tbsp Paprika
  • 1/4 tsp Ground Black Pepper
  • 1/2 tsp Salt (adjust to taste or health requirements)
  • 2 tbsp Tomato Paste (without preservatives, salt or sugar)
  • 2 tbsp Fresh Oregano Leaves (diced)

Instructions
 

Gather The Ingredients

  • Pit the olives (or if you use pitted olives make sure no pits were left).

  • Slice the lemon and remove pits.
  • Measure the spices, olive oil & tomato paste.
  • Rinse and dice the fresh oregano leaves.
  • Rinse, peel and dice the tomatoes.
    Tip: To easily peel tomatoes Gently pierce the tomato skin. Cover with boiling hot water. Wait 20 minutes and peel.

Prepare The Olives

  • Place the pitted olives, sliced lemon, and turmeric in a small pot.
  • Cover with water (about 1 ½ cups water).
  • Bring to a boil. Lower the flame and simmer for 5 minutes.

  • Drain well and remove the lemon slices.

Prepare The Sauce

  • Sauté the crushed garlic cloves in olive oil only until slightly golden (for about 1 minute).

  • Add the diced tomatoes. Bring to a boil, lower the flame and cook for 10 minutes.
  • Add the rest of the ingredients. Stir and continue to simmer for an additional 15 minutes.

Combine Olives & Sauce

  • Add the olives to the sauce.
  • Bring to a boil. Lower the flame and simmer for an additional 5 minutes.

Notes
