Golden Corn Patties
Follow this easy Golden Corn Patties Recipe to combine the rich flavors of corn kernels and sweet potato. Add choice spices to create sweet-savory patties with a golden hue that deepens when baked. Appetizing, gluten free and yummy!
Equipment
- Food Processor
- 1 Large Bowl
- 1 Large Baking Tray
- 1 Large Baking Sheet
Ingredients
- 3 cups Corn Kernels (cooked)
- 1 1/2 cups Sweet Potatoes (cooked and mashed)
- 1 Egg (whisked)
- 1 tbsp Olive Oil
- 6 tbsp Corn Flour – Gluten Free (add a bit more if the mixture is loose)
- 1/4 tsp Ground Black Pepper
- 1/4 tsp Turmeric (spice)
- 1/2 tsp Salt (adjust to taste or health requirements)
Instructions
- Preheat the oven to 350 degrees Fahrenheit (175 Celsius).
- Cook the sweet potatoes for 10 minutes or until tender. Mash with a potato masher or fork.
- Coarsely chop the cooked corn kernels in a food processor.
- In a large bowl, mix the mashed sweet potatoes with the chopped corn. Blend in the egg, corn flour and spices.
- If the mixture is still loose, gradually blend in another tablespoon or two of corn flour.
- Using a tablespoon, spoon the mixture onto the baking tray lined with a baking sheet.
- Bake for 20 minutes or until golden brown.
Notes
Gluten free as well as suited for Passover for those who eat Kitniyot.
