Ingredients
  

  • 3 cups Corn Kernels (cooked)
  • 1 1/2 cups Sweet Potatoes (cooked and mashed)
  • 1 Egg (whisked)
  • 1 tbsp Olive Oil
  • 6 tbsp Corn Flour – Gluten Free (add a bit more if the mixture is loose)
  • 1/4 tsp Ground Black Pepper
  • 1/4 tsp Turmeric (spice)
  • 1/2 tsp Salt (adjust to taste or health requirements)

Instructions
 

  • Preheat the oven to 350 degrees Fahrenheit (175 Celsius).
    Golden Corn Patties Recipe - Ingredients
  • Cook the sweet potatoes for 10 minutes or until tender. Mash with a potato masher or fork.
  • Coarsely chop the cooked corn kernels in a food processor.
  • In a large bowl, mix the mashed sweet potatoes with the chopped corn. Blend in the egg, corn flour and spices.

  • If the mixture is still loose, gradually blend in another tablespoon or two of corn flour.
  • Using a tablespoon, spoon the mixture onto the baking tray lined with a baking sheet.

  • Bake for 20 minutes or until golden brown.

Notes

Gluten free as well as suited for Passover for those who eat Kitniyot.
