Golden Corn Patties

Follow this easy Golden Corn Patties Recipe to combine the rich flavors of corn kernels and sweet potato. Add choice spices to create sweet-savory patties with a golden hue that deepens when baked. Appetizing, gluten free and yummy!

Ingredients

Corn Kernels
(cooked)
1 1/2
cups
Sweet Potatoes
(cooked and mashed)

Egg
(whisked)

Olive Oil

Corn Flour - Gluten Free
(add a bit more if the mixture is loose)
1/4
tsp
Ground Black Pepper
1/4
tsp
Turmeric
(spice)
1/2
tsp
Salt
(adjust to taste or health requirements)
Instructions
Preheat the oven to 350 degrees Fahrenheit (175 Celsius).
Cook the sweet potatoes for 10 minutes or until tender. Mash with a potato masher or fork.
Coarsely chop the cooked corn kernels in a food processor.
In a large bowl, mix the mashed sweet potatoes with the chopped corn. Blend in the egg, corn flour and spices.
If the mixture is still loose, gradually blend in another tablespoon or two of corn flour.
Using a tablespoon, spoon the mixture onto the baking tray lined with a baking sheet.
Bake for 20 minutes or until golden brown.
Notes
Gluten free as well as suited for Passover for those who eat
Kitniyot.
