Chicken Meatballs & Spaghetti
This Chicken Meatballs & Spaghetti Recipe is a healthier version of a beloved favorite. Using lean chicken breasts, create savory chicken balls dotted with herbs. Simmer in rich tomato sauce and dish on a bed of wholegrain spaghetti. A nutritious and delicious treat. Yummy!
Equipment
- 1 Large Bowl
- 1 Nonstick Frying Pan (with cover)
- 1 Large Pot (for cooking the spaghetti)
Ingredients
Chicken Meatballs
- 3 cups Ground Chicken Breasts (1 pound or 500 grams)
- 2 cups Onions (diced)
- 6 tbsp Parsley (finely chopped)
- 1 Egg
- 1/4 cup Wholegrain Breadcrumbs
- 1 tsp Oregano
- 1 tbsp Sweet Paprika
- 1 tbsp Granulated Garlic (spice)
- 1/4 tsp Salt (adjust to taste or health requirements)
- 1/4 tsp Ground Black Pepper
- 2 tbsp Olive Oil (1 tbsp for sauteing onions, 1 tbsp for the chicken mixture)
Tomato Sauce
- 3 cloves Garlic (minced)
- 2 tbsp Olive Oil (1 tbsp for sauteing garlic, 1 tbsp to add to the sauce)
- 6 Tomatoes (large)
- 1 tbsp Sweet Paprika
- 1/4 tsp Ground Black Pepper
- 1 tsp Salt (adjust to taste or health requirements)
- 2/3 cup Tomato Paste (without preservatives, salt or sugar)
- 1 cup Water
Spaghetti
- 500 grams Wholegrain Spaghetti (about 16 ounces)
Instructions
Meatball Mixture
- Finely dice the onions. Sauté in 1 tablespoon of olive oil until golden brown. Let cool.
- Mix the sautéed onions with the ground chicken, egg, breadcrumbs, parsley, 1 tbsp of olive oil and spices. Mix well. Refrigerate for 1/2 hour to solidify the mixture.
- If the mixture seems loose, gradually add breadcrumbs until the mixture is firm enough to form balls.
Tomato Sauce
- Wash the tomatoes and gently make a small cut on the tomato skin.
- Cover the tomatoes with boiling hot water. Wait 15 minutes and remove the peel.
- Cut into small cubes and set aside.
- In a nonstick frying pan, sauté the minced garlic in 1 tablespoon of olive oil for 1 – 2 minutes or until slightly golden.
- Add the cubed tomatoes and simmer until tender.
- Add the rest of the tomato sauce ingredients (including 1 tbsp of olive oil). Cover the pot and simmer for an additional 15 minutes.
Adding The Chicken Meatballs
- Form small balls from the chicken mixture and place them in the simmering tomato sauce. Scoop sauce from the pan to cover the balls.
- Simmer for 30 minutes.
Spaghetti
- Cook the wholegrain spaghetti according to the package instructions.
Chicken Meatball & Spaghetti Dish
- Serve the hot meatballs and tomato sauce on a bed of wholegrain spaghetti.
