Banana Pancake Pocket
This Banana Pancake Pocket Recipe offers a unique way to serve popular pancakes. Mix oat flour, eggs and milk for a nutritious pancake batter. Add bananas to create a creamy sweet filling. Great for breakfast or dessert.
Equipment
- 1 Large Nonstick Frying Pan
- 1 Bowl
Ingredients
- 3/4 cup Oat Flour
- 6 tbsp Milk
- 2 Eggs
- 1 Banana (peeled & sliced into thin circles)
- 1 tsp Coconut Oil (organic – cold pressed)
Instructions
- In a bowl, gradually add milk to the oat flour and blend with a tablespoon. Smooth out the flour lumps.
- Add the egg and beat with a fork until well blended.
- Coat the pan with coconut oil and pour in the pancake batter.
- Peel the banana and slice into thin circles.
- Wait several minutes until the pancake starts to solidify, then place the sliced banana on one half of the circle.

- When the pancake starts to solidify, carefully flip the empty half of the pancake circle to cover the half with the bananas. The bananas are now inside the “pocket”.
- Continue to fry on low flame until the bananas inside soften.
- Gently flip the half circle and fry a little longer on a low flame
Notes
Drizzle with maple syrup for extra sweetness.
