Baked Sweet Potato & Herbs
This Baked Sweet Potato & Herbs Recipe is vegan, gluten free & dairy free. Mix sweet potatoes, choice herbs, olive oil and spices for a desirable and wholesome Mediterranean side dish.
Equipment
- 1 Large Bowl
- 1 Baking Dish (9 1/2-inch square dish or a dish approximately that size)
Ingredients
- 7 Small Sweet Potatoes (peeled)
- 2 tbsp Fresh Parsley (chopped)
- 2 tbsp Fresh Dill (chopped)
- 3 cloves Fresh Garlic (cut into circles)
- 2 tbsp Olive Oil
- 1/4 tsp Salt (adjust to taste or health requirements)
- 1/8 tsp Black Pepper
- 1/4 tsp Nigella Seeds
Instructions
- Preheat the oven to 350 degrees Fahrenheit (175 Celsius).
- Peel the sweet potatoes and place them in a large bowl.
- Add the other ingredients and mix well. Place into a baking pan.
- Bake for 30 minutes or until the sweet potatoes are tender and golden.
Notes
You can also use bigger sized sweet potatoes. Just cut them into large pieces.
