- Deep Round Dish (approximately 11 inches – 28 centimeters)
- Small Pot (for blanching the almonds)
- Small Pot (for making the syrup)
- Spatula (for folding the beaten egg whites into the mixture)
Ingredients
Cake Batter Ingredients
- 6 Eggs (separate whites and yolks)
- 1/4 cup Blanched Almond Butter
- 1/4 cup Fresh Orange Juice
- 1/2 cup Honey (adjust to taste or health requirements)
- 1 tsp Orange Rind
- 1 1/2 cups Blanched Almond Flour
- 1/2 cup Almonds (finely ground in food processor)
- 1 tsp Baking Soda
Syrup Ingredients
- 1/2 cup Honey (adjust to taste or health requirements)
- 2 cups Fresh Orange Juice
- 1 tbsp Orange Rind
Decoration
- 40 Blanched Almonds
Instructions
You can prepare the syrup and blanched almonds in advance.
Prepare The Blanched Almonds
- Place the almonds into a small pot.
- Pour boiling hot water over the almonds and wait 20 minutes.
- Let cool and peel.
Prepare The Syrup
- Gather the syrup ingredients.
- Place the ingredients into a small pot & bring to a boil.
- Simmer for 5 minutes. Let cool.
Prepare The Cake
- Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius).
- Finely grind the almonds in a food processor. Set aside.
- One by one, separate the egg yolks from the egg whites being careful that no egg yolk enters the egg whites.
- Whisk the egg whites on the highest speed until stiff. Set aside.
- Whisk the almond butter and egg yolks until fluffy.
- Gradually add the orange juice, honey and orange rind and whisk for another minute.
- Add the almond flour, ground almonds, and baking soda. Whisk until well blended.
- Using a spatula, delicately fold the beaten egg whites into the mixture until distributed evenly.
- Pour into a round baking pan.
- Bake for 30 minutes or until golden.
- Let the cake cool and remove it from the baking pan.
- Place the cake in a deep round and flat dish.
- Gradually pour the syrup over cake distributing it evenly.
- Decorate the cake with blanched almonds.
Notes
Keep refrigerated.
