- Spatula
- Bunt Cake Springform Baking Pan (or round springform baking pan, 10 inches – 26 centimeters in circumference)
Ingredients
Grapes
- 2 cups Grapes (preferably purple, sweet & seedless)
- 2 tbsp Oat Flour (to coat the grapes)
Batter
- 2 Eggs
- 1/2 cup Blanched Almond Butter
- 1/2 cup Applesauce (without sugar or preservatives)
- 4 tbsp Honey
- 1 tsp Pure Vanilla Extract
- 2 tbsp Fresh Lemon Juice
- 1 tsp Lemon Rind
- 1 cup Oat Flour
- 1 1/2 cups Blanched Almond Flour
- 1 1/2 tsp Baking Soda
- 1/4 tsp Salt
Decoration
- 8 tbsp Almond Flakes (for decorating cake)
Instructions
- Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius).
- Wash the grapes thoroughly and drain well.
- Coat the grapes with 2 tablespoons of oat flour. Set aside.
- Beat the eggs and almond butter in an electric mixer until very well blended.
- Add the applesauce, honey and vanilla. Continue to beat for another minute or two.
- Add the lemon juice and rind and blend well.
- Gradually add the dry ingredients and beat until well blended.
- Fold in the coated grapes with a spatula until distributed well.
- Pour the batter into a bunt cake springform baking pan or a round springform baking pan (10 inches – 26 centimeters in circumference).
- Sprinkle the top of the cake with almond flakes.
- Bake the decorated cake for 40 minutes.
- Let cool and remove from the baking pan.
