Almonds are the star of this yummy creation. These nutritious hamantashen are enriched with natural almonds, almond butter and almond flour. The sweetener is pure maple syrup that blends well with cocoa powder and adds a delicious unique flavor.
As in all Kosher Create’s recipes, all grains used are 100% wholegrain. This recipe calls for wholegrain spelt flour and oats.

Wholegrain Almond Maple Cocoa Hamantashen
Equipment
- Food Processor
- Electric Mixer
- Rolling Pin
- 5 Large Baking Sheets
- 2 Large Baking Pans
Ingredients
Hamantashen Filling
- 2 ½ cups Almonds (raw-natural)
- 1 tablespoon Cocoa Powder
- ⅓ cup Pure Maple Syrup
- 1 teaspoon Pure Vanilla Extract
Hamantashen Dough
- 1 Egg
- ⅓ cup Blanched Almond Butter
- ⅔ cup Pure Maple Syrup
- 1 teaspoon Pure Vanilla Extract
- 1 tablespoon Cocoa Powder
- 1 ¼ cups Wholegrain Spelt Flour (sifted)
- 1 cup Oat Flour
- ½ cup Blanched Almond Flour
- 1 teaspoon Baking Soda
- ⅛ teaspoon Salt
Instructions
Prepare The Filling
- Preheat the oven to 300 degrees Fahrenheit (150 degrees Celsius).
- Gather the filling ingredients.
- Place the almonds in a baking pan lined with a baking sheet.
- Bake the almonds for 10 minutes. Let cool.
- Place the almonds in a food processor and pulse several times.
- Blend on a high-speed taking breaks every few minutes. Scrape the sides of the food processor during the breaks.
- Continue to blend until you’ve created a creamy consistency.
- Be patient. It may take several rounds of blending.
- Mix the cocoa with the maple syrup until blended well.
- Add the mixture and the vanilla to the blended almonds and pulse several times until well blended. Set Aside.
Prepare The Dough
- Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius).
- Gather the dough ingredients.
- Whisk the eggs and blanched almond butter in an electric mixer until well blended.
- Add the maple syrup and vanilla extract and continue to whisk for another minute.
- Add the cocoa powder and gently whisk until well blended.
- Gradually add the other ingredients and whisk until well blended.
Create And Bake The Hamantashen
- Create a ball from part of the dough and place it between two baking sheets.
- Flatten the dough with a rolling pin. The dough should be about 1/8-inch-thick (1/3 centimeter thick).
- Cut 3 inch (8 centimeter) diameter circles with the help of a cookie cutter. (You can use a cutter that is scalloped.)
- Place the cut forms on a baking sheet in a baking pan.
- Create a circle from a tablespoon of filling and place it in the middle of the cut dough circles. Gently flatten the filling.
- Pinch three sides of the circle to create a triangle. Let part of the filling show.
- Gently press the sides of the dough to the filling.
- Bake for 15 minutes.
Notes
- Pinch the three corners of each hamnatashen well before baking.
- Gently press the three sides of the hamantashen to the filling.
