Strawberry Filling
- 2 cups Fresh Strawberries (measured after cut into small cubes)
- ½ cup Honey
- 1 tablespoon Fresh Lemon Juice
- 1 teaspoon Fresh Lemon Rind
- 6 tablespoons Oat Flour
Peanut Butter Dough
- 1 Egg
- ½ cup Peanut Butter (natural 100% peanuts, without preservatives or added sugar)
- ⅔ cup Honey
- 1 teaspoon Pure Vanilla Extract
- 1 cup Oat Flour
- 1 ¼ cups Wholegrain Spelt Flour (sifted)
- ½ cup Blanched Almond Flour
- 1 teaspoon Baking Soda
Peanut Butter Layer
- ½ cup Peanut Butter (natural 100% peanuts, without preservatives or added sugar)
Prepare The Strawberry Filling
Gather the ingredients for the strawberry filling.
Clean the strawberries and cut them into small cubes. Measure 2 cups.
Place the cut strawberries into a medium size pot. Cover the pot and gradually bring them to a boil, mixing them from time to time. Lower the heat.
In a separate pot, heat the honey until you see bubbles.
Carefully, add the honey to the cooking strawberries and mix well.
Add the lemon juice and lemon rind. Mix well, then cook on a low flame for 15 minutes.
After the 15 minutes, gradually add the oat flour, stir and bring to a boil. Lower the flame and simmer uncovered for 5 additional minutes stirring frequently. Let cool.
Refrigerate.
Preheat The Oven & Prepare The Peanut Butter Dough
Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius).
Gather the ingredients for the peanut butter dough. This dough is used both for the base AND the topping.
Whisk the egg and peanut butter until well blended.
Add the honey and pure vanilla extract and whisk until well blended.
Gradually add the oat flour, spelt flour, almond flour and baking soda and whisk until well blended.
Form a ball from the dough.
Slice it in half.
Place half of the dough in the freezer and freeze for 15 minutes.
Tip: You can slice this half of dough into smaller pieces so it will freeze faster.
Create The Base For The Bars
Create an oblong shape with the remaining half of the dough.
Place it between 2 baking sheets. Using a rolling pin flatten the dough to create a rectangle the size of the bottom of the baking pan.
Peel away the top baking sheet, then turn over the baking pan onto the dough.
Holding the bottom of the baking sheet turn the pan over so that the dough goes into the pan.
Peel away the baking sheet.
Using a small rolling pin or your fingers, spread the dough evenly to cover the bottom of the pan.
Perforate holes into the dough with a fork.
Bake for 5 minutes. Remove from the oven and let cool.

Using a grater, grate the cold dough onto the strawberry filling.
Tip: Grating cold or partially frozen dough is easier than soft dough. You can take parts of dough out of the freezer gradually.
Cover the strawberry filling completely.
