- 3 cups Sesame Seeds (to be toasted)
- 1/2 cup Ground Sesame Seeds (measure ¼ cup of sesame seeds and grind them in a coffee-spice grinder - it should yield ½ cup of ground sesame)
- 1/2 cup Raw Tahini
- 2 Eggs
- 1 tsp Pure Vanilla Extract
- 1/4 cup Water
- 3/4 cup Honey
- 1 cup Wholegrain Spelt Flour (sifted)
- 1 1/2 tsp Baking Soda
Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius).
Toast 3 cups of sesame seeds in a nonstick frying pan until golden brown. Keep watch and stir often to prevent burning. Set aside and let cool.
Grind 1/4 cup of sesame seeds in a coffee-spice grinder. It should yield ½ cup of ground sesame. Set aside.
Whisk the tahini and eggs until fluffy.
Add the vanilla, water and honey. Whisk until well blended.
Gradually add the sifted spelt flour, ground sesame and baking soda. Blend well.
Add the 3 cups of pre-prepared toasted sesame seeds and blend well.
Pour into the baking pan. Spread the batter evenly.
Bake for 20 minutes or until golden. Let cool.
Cut lines lengthwise and widthwise to create squares.
Carefully remove from pan.
