Cherry Topping
- 2 cups Fresh Cherries (pitted & cut into small pieces)
- 2 tbsp Pure Maple Syrup (1 tablespoon to cook with the cherries, 1 tbsp to add after cooking if cherries are not sweet enough)
French Toast Ingredients
- 8 slices Wholegrain Challah (½ inch-4 centimeters thick)
- 4 Eggs
- 1/2 cup Milk
- 1/2 tsp Cinnamon
- 2 tbsp Coconut Oil
PrepareThe Cherry Topping
Wash the cherries well and drain.
Take out the pits and cut the cherries into small pieces.
On a low flame, in a small pot, cook the cherries and 1 tbsp maple syrup for 2 minutes. Let Cool.
Add 1 more tbsp of maple syrup if the mixture isn’t sweet.
Prepare The French Toast
Gather the ingredients.
Cut 8 slices of wholegrain challah (½ inch-4 centimeters thick).
In a flat large bowl whisk the eggs, milk and cinnamon with a fork until well blended.
On a low flame, heat 2 tbsp of coconut oil in a large nonstick frying pan. Distribute the oil on the whole pan.
Place a slice of challah into the egg mixture and gently press to absorb the mixture.
Turn the challah over and repeat the process
Carefully place the prepared challah in the frying pan.
Repeat this procedure until all of the pieces are on the pan.
When the underside of the challah is browned, gently turn the piece to the other side and continue to fry until browned.
Place the pieces on a plate and top them with the pre-prepared cherry topping.
Serve hot.
