3 Medium Size Pots With Cover (one for blanching the apricots, one for ice water and one for cooking the apricot filling)

For Preparing The Apricots
- 1 quart - liter Boiling Hot Water
- 1 quart - liter Ice Water
Apricot Filling
- 1 tablespoon Blanched Almond Butter
- 2 cups Fresh Apricots (measured after blanched, peeled, pitted and cut into small cubes)
- 1 tablespoon Fresh Lemon Juice
- 1 teaspoon Fresh Lemon Rind
- 2 tablespoons Honey (adjust according to the sweetness of apricots)
- 6 tablespoons Oat Flour
Blanched Almond Butter Dough
- 1 Egg
- ½ cup Blanched Almond Butter
- ⅔ cup Honey
- 1 teaspoon Pure Vanilla Extract
- 1 cup Oat Flour
- 1 ½ cups Wholegrain Spelt Flour (sifted- you may need to add a small amount of flour if the dough is loose, so sift a bit extra in advance)
- ½ cup Blanched Almond Flour
- 1 teaspoon Baking Soda
Prepare The Blanched Almonds
Prepare The Apricots
Prepare 1 quart of ice water in a medium size pot. Set Aside.
Wash the apricots and make a small plus cut on their bottoms (opposite the stem).
Bring 1 quart of water to a boil in a large pot.
Carefully place the apricots into the boiling water and boil for one minute.
Remove the apricots and transfer them to the ice water.
Let the apricots rest in the water until cooled.
Remove the apricots and peel off the skin.
Cut the apricots in half.
Remove the pits.
Prepare The Apricot Filling
Gather the ingredients for the apricot filling.
Place 1 tablespoon of blanched almond butter on the bottom of a medium sized pot.
Cut the prepared apricots into thin slices. Measure 2 cups.
Place the sliced apricots on top of the blanched almond butter. Add the lemon juice and lemon rind.
Cover the pot and gradually bring it to a boil.
Simmer for 2 minutes, mixing from time to time. Lower the heat.
Add the honey to the cooking apricots and mix well.
Cook on a low flame for 15 minutes.
After 15 minutes, gradually add the oat flour, stir and bring to a boil.
Lower the flame and simmer uncovered for 5 additional minutes stirring frequently. Let cool.
Refrigerate the filling until ready to use.
Preheat The Oven & Prepare The Blanched Almond Butter Dough
Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius).
Gather the ingredients for the blanched almond butter dough. This dough is used both for the base AND the topping.
Whisk the egg and blanched almond butter until well blended.
Add the honey and pure vanilla extract and whisk until well blended.
Gradually add the oat flour, spelt flour, almond flour and baking soda and whisk until well blended.
Form a ball from the dough.
Slice the ball in half.
Place half of the dough in the freezer and freeze for 15 minutes.
Tip: You can slice this half of dough into smaller pieces so it will freeze faster.
Create The Base For The Bars
Create an oblong shape with the remaining half of the dough.
Place it between 2 baking sheets. Using a rolling pin flatten the dough to create a rectangle the size of the bottom of the baking pan.
Peel away the top baking sheet, then turn over the baking pan onto the dough.
Holding the bottom of the baking sheet, turn the pan over so that the dough goes into the pan.
Peel away the baking sheet.
Using a small rolling pin or your fingers, spread the dough evenly to cover the bottom of the pan.
Perforate holes into the dough with a fork.
Bake for 5 minutes. Remove from the oven and let cool.
Create The Topping
Using a grater, (either a food processor or hand grater) grate the cold dough.
Scatter the grated dough on top of the apricot filling. It helps to break the pieces apart with your fingers.
Tip: Grating cold or partially frozen dough is easier than grating soft dough. You can take parts of dough out of the freezer gradually.
Cover the apricot filling completely.
Bake, Form The Bars And Decorate
Bake for 20 minutes or until golden.
Cool well, then cut into squares.
Decorate by placing one blanched almond, previously prepared, on top of each square.
Carefully remove the squares from the baking pan.
The prep time, which is listed as 40 minutes, takes into account the cooking time of the filling and the baking time of the base.
