Follow this easy Sweet Potato & Carrot Tzimmes Recipe to create a special treat. This dish is vegan, gluten free & dairy free. Bake the sweet potatoes and carrots with prunes and raisins to enhance their sweetness. Add orange juice and rind for a tangy touch. With roasted sesame seeds as an added topping, the result is a flavorful and aesthetic dish.

- 3 cups Mini Sweet Potatoes (cut into circles)
- 2 cups Carrots (cut into circles)
- 10 Prunes (pitted, organic, unsweetened, no preservatives)
- 1/2 cup Raisins (organic, unsweetened, no preservatives)
- 1/2 tsp Salt (adjust to taste and health requirements)
- 1 tsp Cinnamon
- 2 tbsp Olive Oil
- 1 tbsp Orange Rind
- 1/2 cup Fresh Orange Juice
- 2 tbsp Sesame Seeds (lightly toasted - for garnishing after the tzimmes is baked)
Sweet Potatoes & Carrot Mixture
You can use a crinkle cutter for cutting the sweet potatoes and carrots.
Peel and cut the sweet potatoes into approximately 1/4-inch (1 centimeter) circles.
Peel and cut the carrots into approximately 1/4-inch (1 centimeter) circles.
Mix the sweet potatoes, carrots, olive oil, salt, black pepper and cinnamon until well coated.
Add the raisins and prunes. Mix well.
Place into a nonstick baking dish.
Cover with a baking sheet and bake for about 45 minutes or until the sweet potatoes are tender.
Uncover the sweet potato mixture.
Add the orange juice and orange rind. Mix well and bake uncovered for another 15 minutes or until golden.
Sprinkle the toasted sesame seeds on the tzimmes before serving.
