- 5 cups Potatoes (grated)
- 2 cups Onions (diced)
- 1/2 cup Blanched Almond Flour
- 2 Eggs (whisked)
- 2 tbsp Olive Oil
- 1/2 tsp Salt (adjust to taste or health requiremwnts)
- 1/4 tsp Ground Black Pepper
Preheat the oven at 350 degrees Fahrenheit (175 Celsius).
Sauté the onions in olive oil until golden brown. (Cover the pot in the beginning. This brings out the natural juices with less use of oil.) Set aside to cool.
Coarsely grate the potatoes.
Place the potatoes in a sieve until the liquid drains out.
Add the other ingredients and mix well.
Using a tablespoon, spoon the mixture onto a baking tray lined with a baking sheet.
Bake for 15 - 20 minutes or until golden.
