Equipment

  • Food Processor (that cuts cubes - or you can opt to slice manually)
  • Flat Bowl (to mash the tuna)
  • Small Bowl (to mix the dressing)

Ingredients
  

Tuna Fish Base

  • 4 Water Packed Canned Tuna (160 grams - 5.6 ounces per can)
  • 4 tablespoon Olive Oil

Dressing

  • 6 tablespoons Blanched Almond Butter
  • 4 tablespoon Fresh Lemon Juice
  • 2 teaspoon Fresh Lemon Rind
  • ½ teaspoon Ground Black Pepper

Additions

  • ½ cup Red Onion (measured after diced into small cubes)
  • ½ teaspoon Salt (adjust to taste or health requirements)
  • ½ cup Fresh Celery Stalks (measured after diced into small cubes)
  • ½ cup Red Bell Peppers (measured after diced into small cubes)
  • ½ cup Pickles (preferably homemade with no additives - measured after diced into small cubes)

Instructions
 

  • Gather the ingredients.

  • Peel and wash the red onion.
  • Dice into small cubes.
  • Mix the onion cubes with the salt and set aside.

  • Open the tuna can and drain the liquid.
  • Place the tuna in a flat bowl.
  • Mash the tuna with a fork until smooth.
  • Add the olive oil and continue to mash until blended well. Set aside.
  • In a small bowl mix the dressing ingredients together until well blended. Add to the tuna and mix well. Set-aside.

  • Wash the celery stalk and bell pepper and measure after dicing them into cubes.
  • Dice the pickle into cubes and measure.
  • Add the diced celery, pepper and pickle to the tuna.

  • Mix well.

Notes

Yields 5 cups.
Using a food processor to cut small cubes is a great option, however small cubes cut manually also work well.
