- 14 ounces Broad Noodles - Wholegrain (400 grams)
- 1/4 tsp Salt (for cooking the noodles)
- 4 Large Apples (peeled, cored & sliced)
- 3 Eggs
- 1 tbsp Almond Butter
- 1 tbsp Lemon Rind
- 1/2 tsp Cinnamon
- 1/2 cup Raisins (seedless, organic, no added sugar or preservatives)
Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius).
Cook the noodles according to the package instructions in boiling water and salt. Drain well and set aside.
Slice the apples into small thin slices. This can be done in a food processor.
Whisk the eggs with the almond butter.
Blend in the cinnamon and lemon rind.
Gradually blend in the noodles, apples and raisins.
Pour the batter into a round baking pan or a bunt cake form.
Bake for 40 minutes or until golden.
