- 2 cups Chickpeas (dried legume)
- 2 tsp Baking Soda
- Water
Peeling The Chickpeas
Drain the chickpeas. Place in a pot and cover with fresh water. Add 2 teaspoons of baking soda and bring to a boil.
Simmer for 5 minutes. Drain and cover the chickpeas with fresh cold water.
Gently rub the chickpeas to seperate the peels.
Remove the peels and drain the chickpeas.
Cooking The Chickpeas
Place the chickpeas in a pressure cooker and cover with 4 cups of fresh water.
Bring to a boil. Activate the pressure cooker according to manual instructions. Simmer for 20 minutes.
If you prefer to use a regular pot: bring the chickpeas to a boil, lower the flame, and simmer for 45 minutes - 1 hour or until the chickpeas are tender.
Cooking time may vary. The chickpeas should be tender.
