Ingredients

Freshly Grated Apples
(approximately 2 apples)

Almonds

(broken into small pieces - can be done in food processor)
Instructions
Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius).
Peel the apples and remove core and pits.
Grate the apples. This can be done in a food processor. Set aside.
Blend 3/4 cup of almonds in a food processor until they start to moisten.
Add the honey, vanilla and cinnamon and blend well to create an almond mixture.
In an electric mixer, on a low speed, whisk the almond mixture and oats until well blended.
On a low speed, blend in the grated apples.
Distribute the mixture onto a large baking pan lined with a baking sheet.
Bake for 15 minutes.
Gently mix the mixture in the baking pan and pat it down gently.
Bake for another 10 minutes.
Lower the oven heat to 302 degrees Fahrenheit (150 degrees Celsius).
Add the 1/2 cup of almond pieces and distribute well.
Bake for another 15 minutes.
Let cool completely.

Store in an airtight jar.
