Cheese Filling
- 1 1/3 cup Cottage Cheese (without preservatives - divide into 2 portions - 2/3 cups each)
Lasagna Sheets
- Lasagna Sheets - Wholegrain (that don't need prior cooking - the amount will depend on the size of your baking dish)
Tomato Sauce Topping
- 2 Fresh Garlic Cloves (peeled & crushed)
- 2 tbsp Olive Oil
- 5 Tomatoes (medium size)
- 1 tbsp Sweet Paprika
- 1 tbsp Granulated Garlic Spice
- 1 tbsp Dried Oregano Spice
- 1/4 tsp Ground Black Pepper
- 1/2 tsp Salt (adjust to taste or health requirements)
- 12 tbsp Tomato Paste (without added sugar, salt or preservatives)
- 1/4 cup Water
Cheese Topping
- 2/3 cup Cottage Cheese (without preservatives)
- 1 tbsp Olive Oil
- Dried Oregano Spice (to sprinkle on top)
Tomato Sauce
In a nonstick frying pan, sauté the crushed garlic cloves for one minute or until light golden.
Wash the tomatoes & gently pierce the tomato skin on two sides with a fork or knife. Pour enough boiling hot water to cover the tomatoes, wait 15 minutes and remove the peels.
Cut the tomatoes into small cubes and add them to the sauteed garlic. Bring to a boil, then lower the flame and simmer until the tomatoes are very tender.
Stir in the rest of the tomato sauce ingredients. Simmer for another 5 minutes. If needed, add a little bit of water for a creamy consistency.

Creating The Lasagna
Spread a thin layer of tomato sauce on the bottom of the baking pan.
Flatly place lasagna sheets on top of the sauce until it is covered. You may have to cut the sheets if they overlap.
Spread a thin layer of the tomato sauce on top of the sheets.
Spread 2/3 cup of cottage cheese on top of the tomato sauce.
Add the second layer of lasagna sheets. Cover with sauce and 2/3 cup of cottage cheese.
Add the third layer of lasagna sheets and cover with sauce.
Spread the cheese mixture on top of the sauce and sprinkle dried oregano.
Bake for 30 minutes or until golden brown.
