- 8 Chicken Breasts - Thinly Sliced (trim the fat)
- 1 Egg (whisked)
- 1/2 cup Wholegrain Breadcrumbs
- 1/2 cup Wholegrain Spelt Flour
- 1/2 cup Sesame Seeds
- 1 tbsp Sweet Paprika
- 1 tbsp Granulated Garlic (spice)
- 1/4 tsp Ground Black Pepper
- 3 tbsp Olive Oil
Preheat The Oven & Gather The Ingredients
Coating the Chicken
Prepare 3 bowls: wholegrain spelt flour, egg (whisked), wholegrain breadcrumbs & sesame mixture (mix breadcrumbs with sesame seeds)
Place each piece of chicken, face down, onto the spelt flour, turn and coat the other side.
Move on to place the chicken, face down, into the beaten egg, turn and coat the other side.
Lastly, place the chicken, face down, onto the breadcrumb & sesame mixture, turn and coat the other side.
Repeat this process until all 8 pieces of chicken are coated.
Baking The Schnitzel
Place a large baking sheet in a baking pan and distribute 1 tablespoon of olive oil on the sheet.
Place the schnitzel pieces on the baking sheet. Sprinkle 2 tablespoons of olive oil on all the pieces.
Bake for 20 minutes or until golden brown.
