Wholegrain Spiced Applesauce Cake

- Electric Mixer
- Round Baking Pan Or Round Bunt Pan (9 inches – 23 centimeters circumference)
Ingredients
- 3 Eggs
- 3/4 cup Blanched Almond Butter
- 4 tbsp Pure Maple Syrup
- 1 1/2 cups Applesauce (without sugar or preservatives, preferably homemade – see link below)
- 1 cup Wholegrain Spelt Flour (sifted)
- 1/2 cup Oat Flour
- 1/2 cup Blanched Almond Flour
- 2 tsp Baking Soda
- 1/8 tsp Salt
- 2 tsp Ground Cinnamon (spice)
- 1/2 tsp Ground Cloves (spice)
- 1/4 tsp Ground Nutmeg (spice)
- 1/4 tsp Ground Ginger (spice)
- 1 cup Raisins (organic, without sugar or preservatives)
Instructions
- Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius).
- Whisk the eggs and blanched almond butter in an electric mixer until well blended.
- Add the maple syrup and continue to whisk for another minute.
- Add the applesauce and whisk until well blended.
- Gradually add the dry ingredients (except the raisins) and whisk until well blended.
- On a low speed, add the raisins and whisk until well blended.
- Pour the batter into the cake pan.
- Bake for 40 minutes or until golden.
- Let cool well before removing from cake pan.
