Tomato Vegetable Soup Recipe

Tomato Vegetable Soup
Vegan & gluten-free Tomato Vegetable Soup is only a few steps away. Follow this easy recipe to sauté diced tomatoes, carrots, zucchini and other choice vegetables with an array of spices. Simmer to fuse the different flavors and your wholesome soup is almost ready. Yummy!
Equipment
- 1 Small Pot (for preparing the tomatoes)
- 1 Nonstick Pan (small – with cover – for cooking the tomato cubes)
- 1 Pot (large enough for 4 quarts or 4 liters)
Ingredients
- 2 cups Tomatoes (approximately 3 tomatoes – peeled and diced)
- 2 cups Onions (approximately 2 onions – diced)
- 2 tbsp Olive Oil
- 3 cups Carrots (approximately 3 carrots – cut into small cubes)
- 3 cups Zucchini (approximately 3 zucchini – cut into small cubes)
- 1 cup Red Bell Peppers (approximately 1 large bell pepper – cut into small cubes)
- 2 stalks Celery (cut into large pieces)
- 1 tbsp Sweet Paprika
- 1 tbsp Oregano
- 1 tsp Turmeric (spice)
- 1/4 tsp Black Pepper
- 1 tsp Salt (adjust to taste or health requirements)
- 6 tbsp Tomato Paste (without preservatives, salt or sugar)
- 3 cups Water
Instructions
- Wash the tomatoes and gently pierce the tomato skin on two sides with a fork or knife. Place into a small pot. Pour enough boiled water to cover the tomatoes, wait 10 minutes and remove the peel.
- Cut the tomatoes into small cubes and slowly bring to a boil in a pan. Cover and let simmer until the tomatoes are very tender (for about 15 minutes). Set aside.
- Sauté the onions in olive oil (Cover the pot in the beginning. This brings out the natural juices with less use of oil.) After several minutes uncover and sauté until golden brown.
- Add the carrots, zucchini and red bell peppers and continue to sauté for several minutes.
- Add the cooked tomatoes, tomato paste, spices and water. Stir well. Bring to a boil then simmer for 40 minutes
