Split Pea Soup

Equipment
- 1 Large Pot (or use a pressure cooker to cut down on cooking time)
Ingredients
- 2 cups Dried Split Peas (soak for 1 hour)
- 4 cups Onions (diced)
- 4 tbsp Olive Oil
- 4 stalks Fresh Celery (cut into large peices – to be removed after the soup is cooked)
- 2 cups Carrots (peeled & cut into thin round pieces)
- 4 tbsp Garlic cloves (measured after cutting into thin circles)
- 4 tsp Salt (adjust to taste or health requirements)
- 2 tsp Turmeric (spice)
- 1/4 tsp Ground Black Pepper
- 10 cups Water ( 2 1/2 quarts – 2 1/2 liters)
Instructions
- Soak the split peas in fresh water for an hour.
- Rinse through a sieve with fresh water. Drain. and set aside.
- Sauté the onions in the olive oil. Cover the pot in the beginning. This brings out the natural juices with less use of oil. After several minutes uncover and sauté until light golden.
- Add the split peas and sauté for several minutes.
- Add the carrots, garlic and spices. Sauté for another several minutes.
- Add the water and bring to a boil.
- Lower the flame and simmer 1 hour 40 minutes or until the split peas are tender.
Notes
If using a pressure cooker, cook for 1 hour.
