Ingredients
Soup
- 4 Cups Pumpkin (cut into small cubes)
- 3 Cups Leeks (cut into circles)
- 4 Celery Stalks
- 4 Sage Leaves
- 4 tbsp Olive Oil
- 2 tsp Salt (adjust to taste or health requirements)
- 1/2 tsp Ground Black Pepper
- 2 tsp Turmeric (spice)
- 6 cups Water
Garnish
- Several Fresh Sage Leaves
- 1 tsp Olive Oil
Instructions
Gathering & Prepping The Ingredients
- Gather the ingredients.
- Peel the pumpkin, rinse and cut into small cubes. Rinse the leeks thoroughly and cut into circles. Rinse the sage leaves and the celery thoroughly.
Preparing The Soup
- In a large pot, place the pumpkin cubes with 1 tablespoon olive oil.
- Sauté the pumpkin cubes until golden. Set aside.
- In the same pot, on low flame, sauté 4 sage leaves in 1 tablespoon of olive oil for 2 minutes.
- Add the leeks to the pot.
- Sauté until tender.
- Add the pre-prepared pumpkin. Mix and sauté for several more minutes.
- Add the celery stalks, salt, ground black pepper and turmeric. Continue to sauté for 2 minutes stirring from time to time.
- Add the water and bring to a boil. Lower the heat and simmer for 40 minutes. Let Cool.
- Remove the celery stalks and sage leaves.
- Blend the soup in a food processor.
Garnishing & Serving The Soup
- For the sage garnish – sauté sage leaves in olive oil on a low flame (be mindful that heated oil tends to splash.)
- Before serving, reheat the soup.
- Garnish with the pre-prepared sage chips by crumbling the leaves with your fingers and topping the soup.
