Oatmeal Raisin Cookies
Follow this easy Oatmeal Raisin Cookies Recipe to create a scrumptious and wholesome cookie. Combine oats, almonds, raisins & applesauce and flavor with a hint of vanilla. With no added sugar, this healthier version of a timeless treat is sure to become a favorite.
Equipment
- 1 Electric Mixer
- 2 Baking Pans (large)
- 2 Baking sheets
Ingredients
- 3/4 cup Almond Butter
- 2 Eggs
- 1 cup Applesauce (unsweetened without preservatives, preferably homemade)
- 1 tsp Vanilla Extract (pure)
- 1 1/4 cups Oat Flour
- 1/2 cup Almond Flour
- 1/2 tsp Salt
- 1 tsp Baking Soda
- 3 cups Oats
- 1 cup Chopped Almonds
- 1 cup Raisins (organic, unsweetened)
Instructions
- Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius).
- Beat the eggs and almond butter in an electric mixer until blended.
- Add the applesauce and vanilla. Continue to beat for another minute.
- Gradually add the oat flour, almond flour, oats, baking soda, and salt. Mix on a low speed until blended.
- Blend in the chopped almonds and raisins.
- Form round circles. Gently flatten the forms on a baking sheet that has been placed in a baking pan.
- Bake for 12– 15 minutes or until golden brown.
