- 2 Small Bowls
Ingredients
- 1 1/2 cups Red Onion (peeled & thinly sliced)
- 1 1/2 tsp Salt (adjust to taste or health requirements)
- 6 cups Fresh Arugula Leaves (thoroughly washed, measured while loosely packed)
- 3 cups Fresh Figs (cut to eights)
Dressing
- 1/4 tsp Ground Black Pepper
- 3 tbsp Olive Oil
- 3 tbsp Balsamic Vinegar
- 1 tbsp Silan – Date Honey
Topping
- 1 1/2 cups Walnuts (coarsly chopped, toasted)
Instructions
Gathering The Ingredients
- Gather all the makings of the salad.
Toasting The Walnuts
- Preheat the oven to 150 Celsius (302 Fahrenheit).
- Break the walnuts into pieces.
- Place the walnuts on a baking sheet.
- Bake the walnuts for 10 minutes. Let cool.
Preparing The Onion
- Slice the onion thinly and place in a small bowl.
- Add the salt, mix and let stand for 10 minutes.
Preparing The Dressing
- Whisk all dressing ingredients, until well blended.
Preparing The Figs
- Cut the figs lengthwise into eights.
Assembling The Salad
- Place the arugula leaves and cut figs in a large bowl.
- Mix the salted onions with the dressing. Add to the large bowl.
- Gently toss the salad, coating it with the dressing.
- Place the salad in a serving dish or platter.
- Top with the pre-prepared toasted walnuts.
Notes
You can prepare the ingredients and dressing in advance, but it’s best to toss the salad right before serving.
