Date Hamantashen

Ingredients
Date Filling
- 10 Dates – Preferably Medjool (organic, no added sugar – remove pits)
- 3/4 cup Walnuts
- 1 1/2 tsp Cinnamon
Hamantashen Dough
- 1 Egg
- 1/3 cup Almond Butter
- 1/3 cup Silan – Date Honey (organic, no added sugar)
- 1 tsp Baking Soda
- 1 1/2 cups Wholegrain Spelt Flour (sifted)
- 1 cup Oat Flour
- 1/3 cup Water
Instructions
Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius).
Prepare The Filling
- Gather the ingredients:
- Remove the pits from the dates.
- Place the dates, walnuts and cinnamon in a food processor. Blend well. The filling should be smooth in texture.
Making The Dough
- Gather the ingredients:
- Whisk the eggs and almond butter in an electric mixer until well blended.
- Add the silan and continue to whisk for another minute.
- Gradually add the other ingredients and whisk until well blended.
- If the dough is not pliable, gradually add a small amount of water until you have a dough that you can roll out.
Forming The Hamantashen
- Create a ball from part of the dough and place it between 2 baking sheets.
- Flatten the dough with a rolling pin. The dough should be about 1/8 inch thick – 1/3 centimeter thick.
- Cut 3 inch (8 centimeter) diameter circles with the help of a cookie cutter. (You can use a cutter that is scalloped.)
- Place a tablespoon of filling in the middle of the circle. Gently flatten.
- Pinch three sides of the circle to create a triangle with 3 points. Let part of the filling show.

- Make sure to pinch the 3 points to prevent the hamantashen from opening during baking.
Baking The Hamantashen
- Place the ready hamantashen on a baking tray lined with a baking sheet.
- Bake for 18 minutes.
