Wholegrain Almond Cinnamon Swirl Cookies
Equipment
- Electric Mixer
- 4 Large Baking Sheets
- Rolling Pin
- 2 Large Baking Pans
- Crinkle Cutter (you can also use a knife; however, a crinkle cutter creates an aesthetic effect)
Ingredients
Cookie Filling
- ½ cup Blanched Almond Butter
- ½ cup Honey
- 1 teaspoon Pure Vanilla Extract
- 4 tablespoons Cinnamon (spice)
- ¼ cup Oat Flour
- ¼ cup Blanched Almond Flour
- ¼ cup Wholegrain Spelt Flour (sifted)
- ½ teaspoon Baking Soda
Cookie Dough
- 1 Egg
- ½ cup Blanched Almond Butter
- ½ cup Honey
- 1 teaspoon Pure Vanilla Extract
- ⅓ cup Water
- 1 cup Blanched Almond Flour
- 1 cup Wholegrain Spelt Flour (sifted)
- 1 cup Oat Flour
- 1 teaspoon Baking Soda
Instructions
Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius).
Prepare The Filling
- Gather the filling ingredients
- Whisk the blanched almond butter, honey and vanilla in an electric mixer until well blended.
- Gradually add the dry ingredients and whisk until well blended.
- Divide the filling into four equal parts.
- Set aside.
Prepare The Dough
- Whisk the egg, and blanched almond butter in an electric mixer until well blended.
- Add the honey and vanilla and continue to whisk for another minute or two.
- Gradually add the other ingredients and whisk until mixed well.
- Create a ball from the dough.
- Divide the ball into four equal parts.
Create The Cookies
- Take one part of the dough and create an oblong shape.
- Place the oblong shaped dough between two baking sheets. Roll it out to a thin oval shape.
- Peel away the top baking sheet.
- Spread one part of the pre-prepared filling to cover the flattened dough.
- Gently begin to roll the dough over the filling.
- Continue to roll until you create a long rolled shaped form.
- Gently cut ½ inch (1 ¼ centimeters) pieces with a crinkle cutter.
- Place the cookies on a baking sheet in a baking pan keeping space between them. The cookies expand while baking.
- Bake for 12 min or until golden.
